If Honey Birds had a heart, it would be made of honey cake. Our Medovik follows a treasured Eastern European family recipe: ten paper-thin honey layers, each one baked until just golden, stacked with clouds of silky sour-cream frosting.

A Cake With a Long Memory

Medovik is one of Eastern Europe’s best-loved desserts, layered honey cakes having been baked and argued over for the better part of two centuries — its history is nearly as rich as the frosting. Every family guards its own version. Ours leans on deeply caramelized honey and a frosting that is more cloud than cream.

Why Ten Layers Matter

Thin layers mean more cream in every bite — and an overnight rest lets the layers soften into that melt-in-your-mouth texture Medovik is famous for. Cut a slice and you can count the stripes; taste one and you stop counting.

Patience is the Secret Ingredient

Every cake rests a full night before it ever meets a plate. No shortcuts. The honey needs time to mellow, the cream needs time to travel into every layer, and the whole cake needs time to become one thing instead of ten. It is the least efficient way to make a cake and the only way we would consider.

How to Enjoy It

Medovik asks very little of you. A fork, ideally. Purists take it plain so nothing distracts from the honey; we are partial to a slice alongside a pot of tea, which is exactly how it has been served across Eastern Europe for generations. However you take yours, cut it thin — a little goes a long and happy way.
